Fwiw I've been focusing hard on what I eat again over the last few weeks and it seems white flour products might be the real culprit, which throws this out of IBS territory straight up into a possible gluten intolerance.
Which is a relief in a way - if so it would allow me to eat everything on Earth again save high-gluten products (I say "high-gluten" because I can eat, say, corn tortillas without much if any problem, but now that I think of it, I'm not sure if a corn tortilla is gluten (glutinous?) or not).

Corn contains a substance known as "corn gluten," but this is not the same gluten that people with celiac or gluten sensitivity need to avoid.
But I'm not sure if corn tortillas are only made with corn, or if they are sometimes made with a mix of corn and wheat. You'd need to check the labels.
"Glutinous" doesn't mean gluten-containing. In particular, the "sticky" variety of rice is sometimes called "glutinous rice", and it doesn't contain gluten.
