The water sprinkling trick is awesome, I admit, I loved it ever since my mom showed it to me. But I have to admit I've never heard about heating the pan and *then* pouring the oil. I usually pour the oil first and then heat it, checking the tempreture with the water trick. There's less popping noises then and food still doesn't stick.
