When pan-frying something like pancakes, use the sunflower oil! That's what high-temp cooking oils are for - to avoid the house being nauseatingly full of smoke afterwards.
After the pan is hot enough, turn the heat setting down to 2 or 2.5. The pan stays quite hot for a long time, even on a low setting. If the setting is higher, the pancakes will get dark too fast.
