This is a crunchy and refreshing salad.

Peel jicama and cut into cubes about 1/2 to 3/4 inch wide.
Mix vinegar* with frozen orange juice concentrate to taste, and pour it over the jicama.
Optionally, add a can of clementines (drained) and/or other fruit.
Tastes best after having been refrigerated a day or 2 to let the dressing soak in.

*I used pear-infused balsamic vinegar.
