Parsley Walnut Pesto Recipe (vegan)

I decided to first saute the walnuts and crushed garlic in the oil. Then I stirred in the nutritional yeast. That by itself was yummy - the texture & taste of the yeast flakes plus oil was wonderful. I'll have to make that as its own dish sometime. After processing it with the parsley and other items*, the pesto turned out pretty tasty too.

I included the pesto in some burritos yesterday and Qiao remarked that they tasted quite good.

*Not having any miso or lime juice, I used salt and some of this kombucha lemon ginger drink instead. The drink is too strong and sour for me on its own so I figured it would make a good substitute for the lime juice.
