I made this the other day, and it tastes quite good and refreshing.
one head/stalk of fresh fennel, diced
3 or 4 small to medium apples, peeled and diced or julienned
small amount of fresh ginger, finely chopped
vinegar
1 to 2 tbsp rose water
Mix all together; add vinegar and rose water to taste. Add in a bit of water if desired. Refrigerate for a while to let the flavors mix.
